Η icel ξεκίνησε σάν μια μικρή οικογενειακή επιχείρηση, στην Ribafria, ένα μικρό χωριό κοντά στη Benedita της Πορτογαλίας. Στην αρχή, η όλη παραγωγή περιοριζόταν σε χειροποίητα μαχαίρια.
